Analysis of the influencing mechanism of the freeze-thawing cycles on in vitro chicken meat digestion based on protein structural changes

Summary: This study investigated the impact of freeze-thaw cycles on the digestive and protein structural properties of chicken breasts during in vitro digestion. The results showed that with an increase in freeze-thaw cycles, the hardness, chewiness, and shear force of chicken breasts increased, while digestibility decreased and particle size increased. The study also confirmed that freeze-thaw cycles led to the disruption of protein structure and induced protein aggregation.

Greener extraction of anthocyanins and antioxidant activity from blackberry (Rubus spp) using natural deep eutectic solvents

Summary: This study investigates an efficient and greener strategy for extracting blackberry anthocyanins using natural deep eutectic solvents (NaDESs). Sixteen different NaDESs were synthesized and compared with conventional solvents. This research provides a promising approach for future investigations on phytochemicals in plants.

Molecular simulation and four-dimensional color graphs were utilized for further optimization of pretreatment conditions to improve economic benefits and energy consumption indicators.

Green and efficient removal of heavy metals from Porphyra haitanensis using natural deep eutectic solvents

Summary: This study investigated the use of 28 kinds of NADESs as eluents for heavy metal removal from Porphyra haitanensis, achieving removal rates ranging from 17.4% to 100%. The optimal condition included 10% water content and a solid-liquid ratio of 1:20, with the addition of 20% natural surfactant arabic gum further enhancing heavy metal removal rates. Adsorption mechanism experiments revealed that the pseudo second-order model and Freundlich adsorption model can better explain the adsorption mechanism of NADESs on heavy metals removal.

The relationship between various properties and temperature was investigated, showing different trends for density, surface tension, refractive index, pH, viscosity, and conductivity.

Effect of deep eutectic solvent's characteristics on extraction and bioactivity of polyphenols fromSapodillapulp

Low pH and high polarity in acid-based DESs significantly enhanced the recovery of polyphenols. Oxalic acid DES showed the highest yield due to the presence of three OH groups, which retarded the interaction between DES and target compounds.
