Determination of methanol and fusel oils in various types of wines distributed in Korea

Summary: The methanol and fusel oils content in different types of wines were measured using headspace-gas chromatography. Korean grape wines had higher methanol content and Korean wild grape wines had higher 1-propanol and isobutanol content. However, Korean black raspberry wine had lower isobutanol content. Korean plum wine and Korean black raspberry wine had lower amyl alcohol content compared to other wines.

Four potential active compounds were identified targeting these enzymes through bioaffinity ultrafiltration coupled with HPLC-MS/MS, with enzyme inhibitory activities verified by enzyme inhibition assay and molecular docking.
