Changes caused by different cooking methods in some physicochemical properties, antioxidant activity, and mineral composition of various vegetables

Summary: This study aims to determine the effects of different cooking processes on various vegetables. The results showed that the cooking process and vegetable type significantly influenced the physical and chemical properties, vitamin C and total phenolic content, and antioxidant activity of the vegetables. Steaming preserved the color and vitamin C content better than boiling. The total phenolic content and antioxidant activity decreased with cooking. The mineral compositions of the cooked vegetables were significantly different from raw vegetables, except for iron. Overall, steamed vegetables retained their color and antioxidant activity closest to raw vegetables.

Mathematical modeling for thermally treated vacuum-packaged foods: A review on sous vide processing
