Rheological properties of artificial boluses of cereal foods enriched with legume proteins

Analysis of umami taste substances of morel mushroom (Morchella sextelata) hydrolysates derived from different enzymatic systems

Summary: Seven enzyme groups were used to hydrolyze broken fruiting bodies of morel mushroom to extract umami substances. The hydrolysate obtained from Neutrase-Flavourzyme (NF) combination showed the best flavor properties, with the highest content of small peptides, free amino acids, and flavor 5'-nucleotides. The reaction conditions of NF were optimized by response surface methodology (RSM) to achieve the highest degree of hydrolysis.

Influence of konjac glucomannan on thermal and microscopic properties of frozen wheat gluten, glutenin and gliadin

Summary: Different concentrations of konjac glucomannan (KGM) had varying effects on the denaturation properties of frozen wheat gluten proteins, with a positive impact on gluten and gliadin, and a decrease in denaturation temperature and enthalpy of glutenin. The addition of KGM increased the alpha-helix structure of frozen gluten and gliadin, while decreasing that of frozen glutenin, indicating a potential interaction mechanism between KGM and the proteins. The scanning electron microscopy results confirmed the enhanced interaction between wheat proteins and KGM.

Summary: This study aimed to determine the chemical composition, amino acid profiling, structural characteristics, and functional properties of protein isolates from two varieties of black cumin seeds. Response surface methodology was used to optimize protein extraction conditions, with factors such as meal to solvent ratio, pH, and extraction time identified as key influencers. The protein isolates had a high protein content ranging from 68.76% to 78.41%, with glutamic acid, aspartic acid, and arginine being the predominant amino acids. The protein isolates exhibited good emulsifying and foaming properties, with the ability to decrease interfacial tension and increase surface area as a function of pH.
