Taste of Fat and Obesity: Different Hypotheses and Our Point of View

Laurent Brondel et al.

Summary: Obesity is the result of an alteration in the homeostatic feedback of energy balance, leading to a temporary or prolonged positive energy balance. Food plays a key role in reward-based energy intake, and an alteration in the brain reward system may contribute to the development of obesity by increasing the attractiveness and consumption of fat-rich foods. Understanding this altered reward system may have implications for the diagnosis, management, and treatment of obesity.

The Effect of Artificial Sweeteners Use on Sweet Taste Perception and Weight Loss Efficacy: A Review

Klara Wilk et al.

Summary: Excessive consumption of sugar-rich foods is a major factor contributing to the global obesity pandemic, and obesity in turn can lead to reduced sensitivity to sweet taste and changes in appetite. Non-nutritive sweeteners (NNS) offer a potential method for reducing caloric intake while maintaining sweetness, although their effects on appetite regulation and sweet taste perception are not yet fully understood.

Sweet, Salty, and Umami Taste Sensitivity and the Hedonic Perception of Taste Sensations in Adolescent Females with Anorexia Nervosa

Magdalena Hartman-Petrycka et al.

Summary: This study analyzed the sensitivity to sweet, salty, and umami tastes in adolescent females with anorexia nervosa (AN) using three measurement methods and evaluated the hedonic perception of taste sensations. The results showed that females with AN had reduced sensitivity to salty taste and increased sensitivity to umami taste. They also assessed the sodium chloride and monosodium glutamate tastes less negatively than healthy controls. The findings suggest that taste sensitivity alterations in AN patients do not necessarily lead to a decreased hedonic assessment of taste experiences.

Associations between Taste and Smell Sensitivity, Preference and Quality of Life in Healthy Aging-The NutriAct Family Study Examinations (NFSE) Cohort

Shirley X. L. Lim et al.

Summary: Taste and smell function decline with age, but little is known about their function in young and middle-aged individuals. This study found correlations between taste and smell sensitivity and sex differences, but no evidence of age-related decline or impact on quality of life.

Investigating New Sensory Methods Related to Taste Sensitivity, Preferences, and Diet of Mother-Infant Pairs and Their Relationship With Body Composition and Biomarkers: Protocol for an Explorative Study

Bianca Fuchs-Neuhold et al.

Summary: This study aims to investigate taste sensitivity, preferences, and dietary diversity of mother-infant pairs, as well as the impact of these variables on body composition and biomarkers. The use of long-term follow-up data collection and integration of audiovisual tools is a novelty of this study. It aims to assess taste-related data in conjunction with parameters like body composition and nutritional intake.

Correlates of bitter, sweet, salty and umami taste sensitivity in European children: Role of sex, age and weight status-The IDEFICS study

Hannah Jilani et al.

Summary: This study investigated the differences in taste sensitivity among 7- to 11-year-old children from eight European countries. The results showed that older children were more sensitive to sweet and salty tastes and less sensitive to umami and bitter tastes. Girls were more sensitive to sweet taste than boys, and overweight or obese children were less sensitive to sweet and salty tastes compared to normal weight children.

Obesity-induced taste dysfunction, and its implications for dietary intake

Fiona Harnischfeger et al.

Summary: The incidence of obesity is increasing, but effective intervention strategies are lacking; Overconsumption of high-fat, high-sugar foods contributes to obesity, which are often palatable; Obesity may affect the taste system, and changes in taste could potentially be targeted for obesity treatment.
