Effect of lactose hydrolysis and salt content on the physicochemical, microbiological, and sensory properties of ayran

Summary: Ayran, a salty drinkable yoghurt, can cause lactose intolerance due to the presence of lactose. This study aimed to produce lactose-reduced or lactose-free ayran by using lactose-hydrolyzed milk. The results showed that the lactose hydrolysis level, salt content, and storage period affected the physicochemical, microbiological, and sensory properties of ayran.

This paper reviews recent studies on membrane compaction, wetting, and fouling, and evaluates the performance of gravity-driven membrane (GDM) systems for water and wastewater treatment.
