Usefulness of Potentially Probiotic L. lactis Isolates from Polish Fermented Cow Milk for the Production of Cottage Cheese

Safety evaluation of Lactococcus lactis IDCC 2301 isolated from homemade cheese

Summary: The research aimed to assess the safety of Lactococcus lactis IDCC 2301 isolated from homemade cheese, using in vitro and in vivo assays to evaluate its antibiotic resistance, hemolytic activity, toxin production, infectivity, and metabolic activity. The results showed that the strain was susceptible to nine antibiotics suggested by EFSA, did not possess toxigenic genes or antibiotic resistance, did not exhibit hemolytic or beta-glucuronidase activity, and did not produce D-lactate or biogenic amines. Single-dose oral toxicity tests in rats showed no toxicity or mortality, indicating that Lactococcus lactis IDCC 2301 can be safely used as probiotics for human consumption.

Microbial Ecology of Sheep Milk, Artisanal Feta, and Kefalograviera Cheeses. Part II: Technological, Safety, and Probiotic Attributes of Lactic Acid Bacteria Isolates

Summary: The aim of this study was to evaluate the technological compatibility, safety, and survival ability of 189 LAB strains isolated from sheep milk, Feta and Kefalograviera cheeses. The results showed that the strains had strong acidification and coagulation capacity in milk, but low lipolytic and gelatinase activity, exopolysaccharide production, amino acid decarboxylation, hemolysis, and bile salt hydrolase activity. The strains exhibited variable susceptibility to antibiotics, with most showing resistance. Additionally, the strains survived well under acid and bile salt conditions.

Summary: This study explored the potential use of Lactococcus lactis strains in the treatment of gastrointestinal cancer. The results showed that these strains inhibited the proliferation of human colorectal adenocarcinoma cells and triggered gene expression in the cells. Additionally, the strains demonstrated probiotic potential, tolerating bile salts and acid exposure, and exhibiting adherence properties. Genetic analysis revealed functional and safety-related features of the strains.
