Dough Rheological Properties and Characteristics of Wheat Bread with the Addition of Lyophilized Kale (Brassica oleracea L. var. sabellica) Powder

Whole Wheat Bread Enriched with Cricket Powder as an Alternative Protein

The bread enriched with 20% cricket powder had the best consumers' acceptance score and contained high levels of indispensable amino acids. Therefore, cricket powder could be a novel alternative protein source for enhancing the nutritional value of whole wheat bread.
