The safety and technological properties of Bacillus velezensis DMB06 used as a starter candidate were evaluated by genome analysis

Summary: In this study, safety and functional evaluation were performed on 171 strains of Bacillus velezensis isolated from fermented soybeans. Strain DMB06 was selected as the best starter candidate due to its high protease and lipase activities. Whole genome sequencing provided genetic information supporting its phenotypic salt tolerance, protease and lipase activities, antibiotic susceptibility, and the absence of toxins and aminoglycoside production. The results suggest that B. velezensis DMB06 can be safely applied as a starter candidate in the food industry.

Incidence of Tetracycline and Erythromycin Resistance in Meat-Associated Bacteria: Impact of Different Livestock Management Strategies

Summary: The study compared the incidence of tetracycline and erythromycin resistances in LAB and CNS from fermented products made using meat from intensive animal husbandry and extensive farms, finding a higher incidence of tetracycline resistance. Genotypic assessment showed strong correlations with specific genes for resistance strains. Multiple correspondence analyses highlighted associations between AR phenotypes and CNS species from Italian salami, while susceptible phenotypes were associated with LAB species from Argentinean sausages.
