Summary: Fast acidification and growth of lactic acid bacteria starter cultures are important to minimize spoilage and failure during food fermentation, and also play a key role in flavor formation. However, high growth rates may lead to lower expression levels of metabolic enzymes and stress proteins, impacting flavor formation.

Additionally, genome mining tools and strategies for RiPP engineering are also discussed in the review.
