Synthesis of CuO nanoparticles stabilized with gelatin for potential use in food packaging applications

Summary: In this study, a method for synthesizing gelatin-stabilized copper oxide nanoparticles was developed. The pH value and ionic strength of the solution were found to affect the stability of the nanoparticles. Applying CuO nanoparticles to food packaging can extend the shelf life of products, as demonstrated through experiments with cheese.

A preliminary investigation of caramelisation and isomerisation of allulose at medium temperatures and alkaline pHs: a comparison study with other monosaccharides

Summary: The caramelization of allulose was studied for the first time in this research, showing that samples prepared with pH 10 and pH 12 buffer solutions resulted in a higher browning rate. Additionally, Allulose samples exhibited the lowest remaining reducing sugar content, indicating a more efficient depletion in the reaction compared to glucose and fructose samples. The approach presented in this study may offer a novel strategy for obtaining allulose-containing caramel-like products more efficiently than traditional methods.
