Emulsifying properties of sugar-based surfactants prepared by chemoenzymatic synthesis

Depending on their carbon chain length and sugar head group, SFAEs have a wide range of hydrophilic-lipophilic balance values, making them suitable for various industrial applications. This study evaluated the interfacial properties and emulsifying performance of three sugar-based surfactants, with 6-O-palmitoyl- and 6-O-stearoyl-1-O-butyl glucopyranosides found to be the most efficient.

One-step, highly stable Pickering emulsions stabilized by ZnO: tuning emulsion stability by in situ functionalization

Recycling Food Waste and Saving Water: Optimization of the Fermentation Processes from Cheese Whey Permeate to Yeast Oil

Summary: In this study, we optimized a two-step fermentation process to produce oil from liquid cheese whey permeate. We achieved high concentrations and productivity of yeast lipids by using waste as carbon feeding and recovering water for yeast growth. Additionally, we developed a fast-flow cytometer method for lipid quantification, improving the accuracy and efficiency of lipid screening.

Relationships between Molecular Structure of Carbohydrates and Their Dynamic Hydration Shells Revealed by Terahertz Time-Domain Spectroscopy
