Chemical composition and antioxidant activity of date (Phoenix dactylifera L.) varieties at various maturity stages

Summary: The current study investigated the impact of four maturity stages on the chemical composition and antioxidant activity of different varieties of dates. The results showed that as the fruit matures, the protein and fat contents decrease, while the glucose, fructose, and total sugar contents increase. The total phenolic content, antioxidant activity, and total flavonoid content also decrease gradually during the maturation process. The highest levels of these components were observed in the Dhaki variety. Furthermore, the mineral and dietary fiber contents also decreased as the fruit matured.
