The mouthdrying detection threshold for whey protein beverages was established between 0.41% and 1.37% protein concentration. Increasing protein levels in beverages resulted in higher perception of mouthdrying and lower liking among consumers.

Volunteers rated whey protein beverages as significantly more mouthdrying than the control beverage, and higher protein concentration in saliva samples post consumption supported mucoadhesion as the mechanism. Modulating saliva flow did not affect the perceived mouthdrying.
