Dairy foods and novel thermal and non-thermal processing: A bibliometric analysis

Nathalia G. Ribeiro et al.

Summary: Processing dairy products using traditional methods can compromise their nutritional and sensory quality. Therefore, there is an increasing demand for research on emerging processing technologies. This study analyzed articles published in the last decade to identify trends in dairy processing. Non-thermal technologies, such as ultrasound, high hydrostatic pressure, and pulsed electric fields, were the most discussed, while ohmic heating and microwave heating were the most reported thermal technologies. The impact of novel food technologies on quality, safety, and energy efficiency, as well as the influence of critical process conditions, were the focus of many studies.
