Flavor compounds of traditional fermented bean condiments: Classes, synthesis, and factors involved in flavor formation

Traditional fermented soybean products: processing, flavor formation, nutritional and biological activities

Summary: Traditional fermented soybean food has become an important part of people's diet due to its unique flavors and improved health benefits. This review comprehensively discusses the historical evolution, distribution, traditional fermentation processing, main sources and characteristics of fermented strains, flavor components, nutritional properties, and biological activities of four traditional fermented soybean foods including douchi, sufu, dajiang, and soy sauce. The review also identifies four major challenges faced by traditional fermented soybean foods, including high salt content, formation of biogenic amine, the presence of pathogenic microorganisms and mycotoxins, and quality inconsistency. It concludes that establishing scientific quality standards and innovative fermentation processes are potential solutions to address these issues and improve the safety of traditional fermented soybean products.

Characterization of selected Chinese soybean paste based on flavor profiles using HS-SPME-GC/MS, E-nose and E-tongue combined with chemometrics

Summary: Headspace solid-phase microextraction gas chromatography-mass spectrometry (HS-SPME-GC/MS) with electronic nose (E-nose) and electronic tongue (E-tongue) were used for flavor characterization of traditional Chinese fermented soybean paste, identifying a total of 57 volatile organic compounds (VOCs). Linear discrimination analysis (LDA) of fusion data showed a high discriminant accuracy of 97.22%, and support vector machine regression (SVR) analysis exhibited a more satisfying performance in predicting the content of esters and total acids.

Detection of the microbial diversity and flavour components of northeastern Chinese soybean paste during storage

Summary: A combination of 16S rDNA and GC-IMS was used to study the changes in the composition of microorganisms and volatile organic compounds (VOCs) during the storage of northeastern Chinese soybean paste. Firmicutes and Actinobacteriota dominated the microbial communities of the soybean paste at the phylum level, bacterial profiles of different samples were different at genus level. Fifty-one VOCs were identified from soybean paste, most of which existed in the early storage stage. Most esters and alcohols decreased with the extension of the storage time, while acids and pyrazines accumulated in the later period of storage.

Additionally, Z. rouxii Y-8 plays a critical role in the formation of VFCs during doubanjiang fermentation.

Comparative study on the novel umami-active peptides of the whole soybeans and the defatted soybeans fermented soy sauce

Summary: The study found that umami-active fractions and <= 3 kDa peptides were mainly concentrated in the supernatants resulted from the treatment with 60% ethanol and the precipitates resulted from the treatment with 80% ethanol. The contents of certain components in SSS were higher than those in SSD, and several tasty peptides were identified in both SSS and SSD, with some peptides identified in SSS and SSD not previously reported. Most of the peptides separated from SSD and SSS could enhance the umami taste of soy sauce, with slightly more kokumi and bitterness hydrophobic peptides found in SSS than SSD.
