Sorption behavior and storage stability of microencapsulated transglutaminase by ultrasonic spray-freeze-drying

Summary: Adsorption isotherms of microencapsulated microbial transglutaminase (mTG) powder produced by various drying methods were studied. The results showed that mTG powder produced by ultrasonic spray-freeze-drying (USFD) method exhibited the best quality parameters and stability.

Microencapsulation of curcumin using coconut milk whey and Gum Arabic

Summary: The study investigated the spray-drying of coconut whey powders with gum Arabic and curcumin, analyzing their physicochemical characteristics, functional properties, and thermogravimetric analysis. Results showed that addition of gum Arabic significantly influenced the encapsulation efficiency of curcumin and spray drying yield, and coconut whey powder was found to be more stable than gum Arabic. The study concluded that spray-drying was favorable for curcumin microencapsulation, particularly when using coconut whey powder with 5% gum Arabic.

Encapsulation of strawberry flavour and physicochemical characterization of the encapsulated powders

Summary: This study aimed to enhance the encapsulation stability of natural strawberry flavour using optimal spray drying conditions, resulting in encapsulates with high yield and solubility. Spray-dried encapsulates were spherical, smooth, and homogeneous, while freeze-dried encapsulates were heterogeneous and spongy. The particle size of spray-dried samples was significantly smaller than freeze-dried samples.
