The structural differences between mushroom and human tyrosinase cleared by investigating the inhibitory activities of stilbenes

Takahiro Oyama et al.

Summary: Tyrosinase plays a critical role in melanin production and inhibitors of this enzyme have important applications in healthcare, cosmetics, and agriculture. This study compared the inhibitory activities of 6 stilbenes for two types of tyrosinase and revealed that the structural differences of these compounds affect their inhibitory effects. The results highlight the importance of selecting appropriate biological resources for specific objectives.
