Analysis of volatile compounds of black bean, mung bean, and soybean extracts prepared with distillation under reduced pressure-continuous liquid-liquid extraction and hot water extraction

Eunji Han et al.

Summary: In this study, volatile compounds in different types of beans were analyzed using two extraction methods. The results revealed the presence of 10 volatile components, with five major compounds identified. It was found that the total volatile compound concentrations were significantly higher in the extracts obtained by DRP-LLE compared to HWE.

Effect of various roasting, extraction and drinking conditions on furan and 5-hydroxymethylfurfural levels in coffee

Sung-hyun Park et al.

Summary: The study quantified levels of furan and 5-HMF in coffee samples, considering factors such as species/origin of beans, roasting conditions, extraction method, and additives. Results showed significant variations in furan and 5-HMF levels based on roasting conditions and extraction methods, with Robusta coffee and espresso extracts having the highest 5-HMF concentrations.

Analysis of α-dicarbonyl compounds in coffee (Coffea arabica) prepared under various roasting and brewing methods

Jeongeun Kwon et al.

Summary: This study investigated the correlations of alpha-dicarbonyl compounds (alpha-DCs) in coffee prepared under various roasting and brewing methods. Factors such as roasting temperature, time, particle size, water quality, and brewing method were found to influence the levels of alpha-DCs in coffee. The roasting temperature and time showed strong negative correlations with the levels of alpha-DCs, with higher temperatures and longer times resulting in lower levels of these compounds.

Analysis of glyoxal, methylglyoxal and diacetyl in soy sauce

Yuri Kim et al.

Summary: This study validated an analytical method for determining alpha-dicarbonyl compounds (alpha-DCs) in soy sauce and found various alpha-DCs, including GO, MGO, and DA, in fermented foods. The developed method successfully analyzed the concentration ranges of alpha-DCs in 20 commercial soy sauces, indicating potential for further investigations on reducing alpha-DC content in soy sauce.
