Analysis of the key aroma volatile compounds in rice bran during storage and processing via HS-SPME GC/MS

Summary: Analysis of volatile compounds in rice bran was conducted using various methods such as SPME, GC/MS, E-nose, and GC-O, identifying 65 compounds classified into six groups. Aldehydes, ketones, and alcohols increased in concentration with storage time, with hexanal as the dominant compound. PCA distinguished volatile compounds in different rice bran samples, showing a shift from grassy, oily flavor to vanilla, cheese, and caramel flavors after processing.

Effect of accumulated temperature on flavour and microbial diversity of japonica rice during storage

Summary: Storage temperature in granaries is closely related to rice grain quality. This study investigated the relationship between microbial community, volatile compounds, and accumulated temperature changes in japonica rice storage granaries over a period of 2 months from February to September. The findings suggest that an accumulated temperature of 650-1000 degrees C·d is an indicator for rapid mold growth and can be used to monitor rice quality and consumption safety.
