Physicochemical and structural changes in myofibrillar proteins from porcine longissimus dorsi subjected to microwave combined with air convection thawing treatment

Insights into the structural characteristic of rabbit glycated myofibrillar protein with high solubility in low ionic strength medium

Summary: The structural characteristics of rabbit glycated myofibrillar protein (GMP) with different solubility in low ionic strength medium were analyzed. The results showed that GMP with 75.07% solubility had less α-helix and more random coil structures compared to GMP with other solubility levels. Additionally, changes in tertiary structure such as reduced intrinsic fluorescence intensity and red shift of UV absorption spectrum peaks were observed in GMP with 75.07% solubility. Protein oxidation may also play a role in the structural changes.

Effect of sodium bicarbonate and sodium chloride on aggregation and conformation of pork myofibrillar protein
