Detoxification of patulin by Lactobacillus pentosus DSM 20314 during apple juice fermentation

Summary: This study aimed to screen probiotic strains for effective patulin control during juice fermentation. Among the six LAB strains tested, Lactobacillus pentosus (DSM 20314) showed the highest efficiency in removing patulin in apple juice, detoxifying 53.14% of the mycotoxin within 24 hours. The results indicate the potential of these probiotic strains in controlling patulin during apple juice fermentation and digestion.

In Vitro Mechanism Assessment of Zearalenone Removal by Plant-Derived Lactobacillus plantarum BCC 47723

The findings suggest that hydrophobicity is the main mechanism for ZEA removal by L. plantarum BCC 47723, and heat treatment can enhance its efficiency for ZEA reduction, making it a potential organic adsorbent for ZEA reduction in food and feedstuff.

An overview of the combination of emerging technologies with conventional methods to reduce acrylamide in different food products: Perspectives and future challenges

Summary: Acrylamide is a well-known toxic compound formed during the thermal processing of food products through the Maillard reaction or acrolein route, and it is a probable human carcinogen. There are two main approaches for reducing acrylamide concentration - either by preventing its formation or by removing it after generation, which can be achieved through conventional and emerging techniques, with a combination of methods being more efficient. Different techniques and their combinations for reducing acrylamide in various food products were discussed, along with the potential sensory changes in food products resulting from acrylamide reduction strategies.
