Enzymatic extraction and functional properties of phosphatidylcholine from chicken liver

Physicochemical characteristics and in vitro bioavailability of licorice (Glycyrrhiza glabra L.) extract complexed using cyclic glucans

Summary: In this study, inclusion complexes (ICs) were developed using beta-cyclodextrin (CD), 2-hydroxypropyl-beta-cyclodextrin (HP), and cycloamylose (CA) to overcome the low solubility and bioavailability of Licorice extract (LE). The ICs successfully enhanced the phase solubility of LE and increased its bioaccessibility and bioavailability significantly. This study provides a promising strategy to overcome the application limits of LE in various industries.

Stability properties and antioxidant activity of curcumin nanosuspensions in emulsion systems

Summary: In this study, curcumin nanosuspensions were prepared using D-alpha-tocopheryl polyethylene glycol succinate, and their physical properties were investigated. The nanosuspensions with higher curcumin concentration had smaller initial particle size and lower aggregation rate during storage. Additionally, emulsions with higher curcumin content showed improved antioxidant effects compared to the control group.

Microencapsulation of curcumin using coconut milk whey and Gum Arabic

Investigation of the Formation Mechanism and Curcumin Bioaccessibility of Emulsion Gels Based on Sugar Beet Pectin and Laccase Catalysis

Loading curcumin into various plant-based milk analogs did not affect the properties or stability of the oil bodies, and the bioaccessibility of curcumin was much higher compared to a crystalline form. This information may be valuable in developing the next generation of nutritionally fortified plant-based milk analogs.
