Dietary cholesterol oxidation products: Perspectives linking food processing and storage with health implications

Yan Liu et al.

Summary: This passage discusses the formation of dietary cholesterol oxidation products (COPs) and their potential deleterious effects on human health, emphasizing the importance of understanding the conditions of COPs formation and determination methods, as well as the implications for human health and the role of phytochemicals in ameliorating the effects of COPs.

Oxysterols as Reliable Markers of Quality and Safety in Cholesterol Containing Food Ingredients and Products

Federico Canzoneri et al.

Summary: Cholesterol is a lipid that easily undergoes oxidation to produce oxysterols. Different kinds of oxysterols are found in animal products, some of which have antiviral activity and contribute to immunity. Gas or liquid chromatography combined with mass spectrometry allows accurate measurement of oxysterols in food. Quantification of oxysterols can serve as markers for food quality, safety, and nutritional value. It is proposed to routinely assess a subset of oxysterols in food production and storage.

Oxysterols - how much do we know about food occurrence, dietary intake and absorption?

Guadalupe Garcia-Llatas et al.

Summary: Oxysterols are formed in foods during processing and storage, impacting the nutritional profile and health, and should be monitored for more realistic data. Further understanding of oxysterol absorption mechanism and metabolism, through bioavailability studies, could provide new insights for the food-health axis. Suitable technological solutions and antioxidants may help prevent in vivo oxidation.
