Formation and mitigation of PAHs in barbecued meat - a review

Lene Duedahl-Olesen et al.

Summary: This review summarizes the relevant methods for reducing carcinogenic polycyclic aromatic hydrocarbons (PAHs) in barbecued meat, including adjusting the heat source, barbecue geometry, meat type, marinating, adding spices, and other antioxidants. Reducing PAHs exposure can decrease the risk of cancer.

Substitute salts influencing the formation of PAHs in sodium-reduced bacon relevant to Maillard reactions

Yuzhu Li et al.

Summary: The study evaluated the influence of six sodium-reducing treatments on the formation of polycyclic aromatic hydrocarbons (PAHs) in baked bacon. Results showed that different treatments had varied effects on PAHs formation, likely involving Maillard reactions. pH adjustment played a crucial role in the impact of substitute salts on the generation of PAH4.

Theoretical investigation of benzo(a)pyrene formation

Edina Reizer et al.

Summary: In this study, new reaction pathways leading to benzo(a)pyrene were explored using DFT methods to gain a deeper understanding of its carcinogenic effects. The research found that HAERA was the most exergonic reaction pathway, while DA was the least exergonic.
