Advances in Multi-component Supramolecular Oleogels- a Review

Flaxseed oil-wax oleogels replacement for tallowfat in sucuk samples provided higher concentrations of polyunsaturated fatty acids and aromatic volatiles

Summary: The study aimed to replace tallowfat with oleogels in sucuk preparations and found that sucuk-BWO had higher fat and lower moisture content. Oleogel-containing samples had higher levels of polyunsaturated fatty acids but lower instrumental texture values. Development and Characterization of Compound Oleogels Based on Monoglycerides and Edible Waxes

Summary: A combination of different gelators provides a parable way to create oleogels with enhanced properties. When MG is compounded with wax, the gelation process is controlled by MG while waxes enhance the basic network of MG crystals at low temperatures. The resulting oleogels exhibit delayed digestion and stronger mechanical properties, mainly due to hydrogen bonding and denser crystal network.

Novel pumpkin seed oil-based oleogels: development and physical characterization

Summary: The study aimed to develop novel oleogels using pumpkin seed oil and natural waxes. Different percentages of beeswax and carnauba wax were evaluated in pumpkin seed oil, with carnauba wax-based oleogels showing higher viscoelastic properties and firmness. The fractal dimension of the network was comparable to widely used fats in food production, indicating potential for pumpkin seed oil in creating novel oleogels.
