Novel Temperature-Responsive Rosin-Derived Supramolecular Hydrogels Constructed by New Semicircular Aggregates

Summary: In this study, a highly water-soluble rosin-based surfactant was synthesized and used to prepare temperature-responsive supramolecular hydrogels. The hydrogels exhibited a unique twisted semicircular aggregate microstructure and excellent mechanical properties and shear-recovery properties. By adjusting the temperature, the hydrogels could transform into viscoelastic solutions. NMR and FTIR spectroscopy were used to explore the self-assembly mechanism of the hydrogels.

Properties of soybean protein isolate/curdlan based emulsion gel for fat analogue: Comparison with pork backfat

Summary: This study presents a method to fabricate an analogue of pork backfat using a combination of emulsion and gel. By using soybean protein isolate and curdlan, an emulsion gel was prepared and its microstructures, rheology properties, water holding capacity, and freeze-thawing stability were investigated. The results showed that the emulsion gel was thermal irreversible and the oil content significantly affected its water holding capacity and freeze-thawing stability. Compared with pork backfat, the emulsion gel with 10 wt% oil content exhibited no significant differences in hardness, chewiness, springiness, and gel strength.

Physical and Chemical Characterisation of Conventional and Nano/Emulsions: Influence of Vegetable Oils from Different Origins

Summary: This study investigated the correlations between the physical and chemical properties of various vegetable oils and the stability of conventional and nanoemulsions. The results showed that the stability of emulsions was influenced by fatty acid composition, antioxidants, free fatty acids, and droplet size. Unsaturated fatty acids were positively correlated with emulsion oxidative stability, with certain oils showing significantly higher stability. Nanoemulsions with smaller droplet sizes exhibited better physical stability compared to conventional emulsions, indicating the importance of droplet size in emulsion stability.

Function emulsion gels prepared with carrageenan and zein/carboxymethyl dextrin stabilized emulsion as a new fat replacer in sausages

Summary: This study evaluated the use of emulsion gels prepared with carrageenan and emulsion stabilized by zein/carboxymethyl dextrin as fat substitutes in sausages. The results showed that the addition of emulsion gels improved the hardness and viscoelasticity of sausages and enhanced their microstructure. Furthermore, the incorporation of emulsion gels and curcumin reduced cooking loss and increased antioxidant activity in sausages.
