Contribution of mixed commercial starter cultures to the quality improvement of fish-chili paste, a Chinese traditional fermented condiment

Summary: This study evaluated the effects of commercial starter cultures on various aspects of fermented fish-chili paste. The results showed that the application of mixed starter cultures promoted the growth of beneficial microorganisms while inhibiting harmful ones. It also resulted in higher levels of desirable amino acids and lower levels of bitter components. In addition, the use of starter cultures reduced the levels of biogenic amines and undesirable odor compounds.

Fish sauce fermentation using Marinococcus halotolerans SPQ isolate as a starter culture

Effect of volatile compounds on the quality of miso (traditional Japanese fermented soybean paste)

Summary: Optimizing the extraction conditions for volatile compounds in miso revealed that raw samples at 80 degrees Celsius detected the highest number of compounds, which were positively associated with miso quality. Principal component analysis highlighted the contribution of detected volatile compounds to miso quality assessment.

Characterization of volatile compounds and physicochemical properties of hongeo using headspace solid-phase microextraction and gas chromatography-mass spectrometry during fermentation

Summary: The study investigated the changes in volatile composition and chemical properties of fermented skate, hongeo at different stages of fermentation using headspace solid-phase microextraction and gas chromatography-mass spectrometry. The results showed significant increases in pH, ammonia nitrogen, total volatile base nitrogen, and trimethylamine nitrogen content during fermentation. A total of 208 volatile compounds were detected, with a dominant presence of amines, hydrocarbons, and alcohols in unfermented samples, while pyrazines, indoles, phenols, and sulfur compounds appeared from early to middle stages and increased until the end of fermentation. The study highlights the important role of microbial metabolic activity in the formation of unique flavors in hongeo products.
