Antibacterial activity and mechanism of 460-470 nm light-emitting diodes against pathogenic bacteria and spoilage bacteria at different temperatures

Jeong-Eun Hyun et al.

Summary: This study found that 460/470 nm LED illumination significantly reduced the levels of E. coli O157:H7, P. fluorescens, and L. monocytogenes, and induced oxidative stress leading to cell death by increasing intracellular ROS levels and causing damage to the membrane and DNA.

Potential Adjuvant Therapeutic Effect of Lactobacillus plantarum Probio-88 Postbiotics against SARS-COV-2

Irfan A. Rather et al.

Summary: This study evaluated the potential of a novel probiotic Lactobacillus plantarum Probio-88 against SARS-COV-2 infection, showing significant inhibition of virus replication and inflammation levels. It was postulated that the antiviral activity was derived from plantaricin E and F, which might serve as blockers for virus replication.

Comparison of Quality Characteristics of Commercial Kimchi Manufactured in Korea, China, and the United States

Ye-Rang Yun et al.

Summary: Commercial kimchi manufactured in Korea showed high mineral and free sugar contents, with relatively low organic acid content. Korean kimchi also had markedly higher free amino acid content compared to kimchi from China and the United States. Additionally, volatile compound content varied between kimchi produced in different countries. The microbial community in Korean kimchi included more Leuconostoc and Weissella, and showed the highest antioxidant activity.

Bacteriocinogenic Potential of Bacillus amyloliquefaciens Isolated from Kimchi, a Traditional Korean Fermented Cabbage

Sungmin Jung et al.

Summary: This study aimed to identify a bacteriocin-producing strain for controlling the food-borne pathogen Listeria monocytogenes. Five strains were isolated from kimchi with activity against the target bacterium, and ST05DL was selected for further study due to its specific inhibitory activity.

Functional Genomic Insights into Probiotic Bacillus siamensis Strain B28 from Traditional Korean Fermented Kimchi

Sojeong Heo et al.

Summary: Bacillus siamensis strain B28, isolated from traditional Korean fermented kimchi, does not contain antibiotic resistance, hemolysin or enterotoxin genes. It shows potential probiotic properties and sensitivity to eight antibiotics, with antibacterial activity against seven foodborne pathogens.

Bacteriocinogenic Bacillus spp. Isolated from Korean Fermented Cabbage (Kimchi)-Beneficial or Hazardous?

Joanna Ivy Irorita Fugaban et al.

Summary: Bacillus velezensis, Bacillus amyloliquefaciens, and Bacillus subtilis strains isolated from artisanal-produced kimchi showed antimicrobial activity against Listeria monocytogenes, with some strains possibly having additional non-proteinaceous molecular structure related antimicrobial activity. These strains also expressed surfactin as an additional factor in their complex antimicrobial activity. Additionally, the studied Bacillus strains were resistant to some evaluated antibiotics and were positive producers for biogenic amines production.
