Description of drying of jackfruit seed through diffusive models

Summary: This study conducted drying experiments on jackfruit seeds with and without the endocarp using an oven at temperatures of 60 and 70 degrees C. Two diffusive models were applied to describe the drying process and analyze the effects of temperature and endocarp presence on the thermo-physical parameters. The experimental data showed that both models adequately fitted the data, with model 1 showing better performance. The presence of the endocarp was found to have a significant influence on the total drying time and thermo-physical parameters of the process.

Different dimensional models were used to study the temperature and moisture distribution during drying. Shrinkage was found to have an effect on moisture distribution, emphasizing the importance of considering shrinkage in convective drying phenomena.
