Lubrication with Non-Newtonian Fluids

B. Veltkamp et al.

Summary: This study investigates the hydrodynamic lubrication of shear thinning and viscoelastic polymer solutions. While elasticity does not significantly affect friction, shear-thinning properties influence the formation of the lubricating layer thickness and the relationship between friction and velocity. A hydrodynamic model considering shear thinning is developed and compared to experimental data, showing good agreement with lubrication parameters. However, the model underestimates the lubricating layer thickness. The analysis reveals that shear thinning primarily affects the layer thickness, which is the main determinant of the friction coefficient.

Lubricated Friction and the Hersey Number

B. Veltkamp et al.

Summary: This study investigates the lubrication issue between a plate and a sphere, measuring liquid layer thickness and friction simultaneously. A modified version of the Hersey number is proposed to account for geometry effects and successfully predict lubrication layer thickness.

Predicting thickness perception of liquid food products from their non-Newtonian rheology

Antoine Deblais et al.

Summary: The perceived thickness of liquid foods is directly related to their non-Newtonian rheology, with the force required to make the sample flow in the mouth being proportional to the subjective feeling of thickness. Research shows that our tongues act as logarithmic measuring instruments, in line with the Weber-Fechner law predicting a logarithmic relation between stimulus amplitude and perceived strength, paving the way for more accurate prediction of mouthfeel characteristics of liquid food products.
