Summary: Pectin undergoes physicochemical reactions under dehydration stress. Dry-heating treatment of sugar beet pectin at different temperatures and times resulted in the formation of insoluble and irregular-shaped flocs through polymerization. The endogenous protein moiety plays an essential role in the polymerization of SBP under dry-heating, possibly through amidation with carboxyl groups. Dry-heating treatment can be used to improve the emulsifying properties of SBP by enhancing surface hydrophobicity.
