Hydrogel Emulsion with Encapsulated Safflower Oil Enriched with Acai Extract as a Novel Fat Substitute in Beef Burgers Subjected to Storage in Cold Conditions

Monika Hanula et al.

Summary: This study evaluates the effects of using a fat substitute enriched with encapsulated safflower oil and acai extract in beef burgers. The results showed that the fat substitute improved the texture and color parameters of the burgers, and slowed down the oxidation rate of polyunsaturated fatty acids. The addition of acai extract also reduced changes in volatile compounds. The fat substitute enriched the burgers with polyunsaturated fatty acids, reducing the risk of high blood lipid levels and blood clot formation, while increasing the ratio of hypocholesterolemic to hypercholesterolemic components in the consumed meat.

Preparation of nano/microcapsules of ozonated olive oil in chitosan matrix and analysis of physicochemical and microbiological properties of the obtained films

Nikola Nowak et al.

Summary: In order to address the problem of food spoilage caused by microorganisms, active or intelligent packaging is being used. Biodegradable polymer composites are considered as a potential replacement for plastics. By encapsulating biologically active substances in a polymer matrix, controlled release of the substance is possible. The use of ozone has been found to limit the growth of microorganisms, and the addition of ozone derivatives of unsaturated fats enhances its bactericidal effect. In this study, the physicochemical and bacteriostatic properties of chitosan-based films containing encapsulated nanocapsules of ozonated olive oil were analyzed.

Quality of Beef Burgers Formulated with Fat Substitute in a Form of Freeze-Dried Hydrogel Enriched with Acai Oil

Monika Hanula et al.

Summary: The growing number of high-risk individuals for cardiovascular disease has led to changes in consumer diets and food reformulation. A study on beef burgers found that the use of a lyophilized hydrogel emulsion enriched with encapsulated acai oil as a fat substitute resulted in burgers with higher polyunsaturated fatty acid content and lower saturated fatty acid content. These reformulated burgers also showed lower atherogenicity and thrombogenicity indices and reduced cooking loss. Consumer perception of these burgers did not show significant differences compared to control burgers.
