Biological activities of peptides obtained by pepsin hydrolysis of fishery products

Daniel Castaneda-Valbuena et al.

Summary: The fishing industry generates valuable waste that contains a high amount of proteins. Processing these proteins can lead to products with nutritional, pharmacological, and technological benefits due to the presence of peptides. This review compiles investigations on the production of peptides from fish proteins using pepsin as a catalyst, highlighting their biological properties and potential uses.

Characterization of an intracellular aspartic protease (PsAPA) from Penicillium sp. XT7 and its application in collagen extraction

Yujie Guo et al.

Summary: PsAPA is an intracellular aspartic protease with low-temperature and acidic properties, capable of effectively hydrolyzing animal proteins like myoglobin and hemoglobin, but not collagens. Its presence can increase the yield of collagen extraction compared to traditional methods.

Impacts of pH and temperature on the conformation of a protease from Pediococcus pentosaceus R1 isolated from Harbin dry sausage

Fangda Sun et al.

Summary: This study investigated the effects of pH and temperature on the structural characteristics of the Pediococcus pentosaceus R1 protease isolated from Harbin dry sausage. The protease exhibited stable spatial structure at pH 5 and 30°C, while changes in secondary structure components were observed at pH 8 and 70°C. The protease was found to interact with actin and myoglobin, suggesting potential applications in the fermentation of Harbin dry sausage.

Exploring the interactions of naringenin and naringin with trypsin and pepsin: Experimental and computational modeling approaches

Xiangrong Li et al.

Summary: The study investigated the bindings of naringenin and naringin to trypsin and pepsin using multi-spectroscopy analysis and computational modeling approaches. The results showed that both compounds can quench the intrinsic fluorescence of the enzymes through a static quenching mechanism, with naringin binding more firmly than naringenin. Thermodynamic analysis indicated that the interactions are synergistically driven by enthalpy and entropy, with major forces being hydrophobic, electrostatic interactions, and hydrogen bonding.
