Gastrointestinal digestion and absorption characterization in vitro of zinc-chelating hydrolysate from scallop adductor (Patinopecten yessoensis)

Summary: Results showed that during temporary storage at 4 degrees C, the Zn-chelating capacity of SAH decreased in the aqueous phase, while the SAH-Zn complex remained stable. Additionally, Zn altered the surface structures of SAH, involving carboxyl groups. In vitro GI digestion suggested that the SAH-Zn complex maintained stability and only a proportion of high molecular weight was cleaved.

Preparation, characterization and in vitro stability of iron-chelating peptides from mung beans

Summary: This study demonstrates that enzymatically hydrolyzed mung bean protein possesses good ability to chelate ferrous ions, with the potential for high chelation rates through adjustment of reaction conditions. Meanwhile, affinity chromatography can be utilized to obtain fractions with high chelating activity, and the synthesized chelates exhibit high digestive stability both in vitro and in acid-alkali tolerance assays.

Summary: In this study, a novel peptides-zinc chelate (AKP-Zn) was obtained by reacting Antarctic krill peptides (AKP) with zinc sulfate. The structure and composition of AKP changed significantly after chelating with zinc. AKP-Zn chelate showed higher stability than zinc sulfate and zinc gluconate in various pH conditions and simulated gastrointestinal digestion experiments.

Antioxidant activity and functional properties of Alcalase-hydrolyzed scallop protein hydrolysate and its role in the inhibition of cytotoxicity in vitro

Summary: Among the three scallop protein hydrolysates, the Alcalase-hydrolyzed SPH showed the highest antioxidant activity and solubility, with inhibitory effects on free radicals and lipid oxidation. ASPH also exhibited excellent emulsifying and foaming properties, potentially providing protective effects on cells through ROS inhibition.
