Phenolic Compounds, Antioxidant and Antibacterial Activities of Extracts from Aerial Parts of Thymus zygis subsp. gracilis, Mentha suaveolens and Sideritis incana from Morocco

Summary: This study investigated the phenolic composition, antioxidant and antibacterial properties of Thymus zygis subsp. gracilis, Mentha suaveolens and Sideritis incana extracts from the Ifrane region of Morocco. The extracts showed high antioxidant activity and demonstrated bactericidal or bacteriostatic effects against both Gram-positive and Gram-negative bacteria. These plants have the potential to be used as natural antioxidant and antibacterial agents in the food and pharmaceutical industries.

Microbial Risk Assessment of Industrial Ice Cream Marketed in Italy

Summary: This study provides guidance for industrial ice cream manufacturers in the management of microbiological hazards. Ice cream, a globally consumed frozen dairy dessert, can transmit foodborne pathogens despite the positive impression of microbiological safety in its frozen state. Analysis of 200 milk-based industrial ice cream samples in Italy revealed unsatisfactory loads of aerobic colonies in two samples and Enterobacteriaceae in nine samples. L. monocytogenes was detected in 16 samples, with three samples exceeding the acceptable limit during marketing. No unsatisfactory loads were found for coagulase-positive staphylococci and no Salmonella spp. were detected. The findings suggest that inclusions and inadequate manufacturing and hygiene practices may contribute to contamination in industrial ice cream, emphasizing the need for a comprehensive approach to ensure quality and safety.

Comprehensive Evaluation on the Use of Thymus vulgaris Essential Oil as Natural Additive against Different Serotypes of Salmonella enterica

Summary: Essential oils, particularly Thymus vulgaris essential oil (TV-EO) from Morocco, have been found to possess significant antioxidant and antibacterial activities against different serotypes of Salmonella enterica subsp. enterica, making them suitable for ensuring food safety and quality in line with sustainable trends. The chemical composition of TV-EO, including its most representative compound thymol, was analyzed through hydrodistillation and GC-MS analysis. Mathematical models were used to predict the behavior of Salmonella exposed to TV-EO, which showed consistent results with experimental findings including in situ antimicrobial activity and sensory preservation in contaminated poultry meat.

Microbiological and sensory evaluation of meat sausage using thyme (Thymus vulgaris, L.) essential oil and powdered beet juice (Beta vulgaris L., Early Wonder cultivar)

Summary: This study evaluated the joint addition of thyme essential oil and powdered beet juice to meat sausages for reducing nitrates and nitrites. Thyme essential oil showed high inhibitory action against Staphylococcus aureus and Escherichia coli, and bactericidal effect in all tests applied in vitro. The combined use of thyme essential oil and powdered beet juice showed potential viability as a replacement for nitrates and nitrites in meat sausages.
