Laccase-induced wheat bran arabinoxylan hydrogels from different wheat cultivars: Structural, physicochemical, and rheological characteristics

Summary: This study explored the impact of different cultivars of arabinoxylan (AX262, AX44, AX229) on the characteristics of AX hydrogels. It was found that AX262 had a faster gelation rate and higher viscoelastic modulus. AX262 also exhibited a higher oxidative cross-linking degree, resulting in a denser gel network. Additionally, AX262 showed better water binding ability and thermal stability. The gelation properties of different AX cultivars were attributed to differences in molecular structure.

Design and structural characterization of edible double network gels based on wheat bran arabinoxylan and pea protein isolate

Summary: Double network (DN) gels based on wheat bran arabinoxylan (WBAX) and pea protein isolate (PPI) were fabricated using a two-step sequential gelation method. Increasing the concentrations of WBAX and PPI improved the viscoelastic modulus and water holding capacity of the DN gel. The molecular structure analysis revealed that the crosslinking of WBAX-WBAX, PPI-PPI, and WBAX-PPI contributed to the formation of WBAX-PPI DN gels.

Summary: The combination of SPI and SBP can be used to prepare an IPN hydrogel with tunable properties. The addition of probiotics resulted in changes in gel properties, decreasing storage modulus and hardness. Probiotics exposed tryptophan-containing extension regions within SPI molecules and hindered the formation of covalent cross-links or physical interactions during gelation.
