Addition of milk to coffee beverages; the effect on functional, nutritional, and sensorial properties

Summary: The debate on the effect of adding milk to coffee in terms of nutritional quality and functional properties of phenolic compounds continues. The interactions between milk components and coffee phenolics may play a crucial role in the masking/negative impact on antioxidant activity and bioavailability of coffee bioactives. However, the role of milk fat globules and the milk fat globule membrane has not been addressed in the literature so far, indicating a need for further research in this area.

Impact of temperature and surfactant addition on milk foams

Summary: Milk, a complex colloidal solution, was studied in terms of using foam properties as composition markers, with investigations on the effects of surfactants and temperature on foams from different fat compositions. Results showed that toned milk with anionic surfactant at 60°C displayed higher foamability, indicating a potential for novel milk assay protocols.

In-situ rheological and structural characterization of milk foams in a commercial foaming device

Summary: The study presented an experimental setup for in-situ characterization of physical parameters of food foams, showing reliable determination of yield stress, gas volume fraction, and bubble size distribution at different heights. It was found that the gas volume fraction and bubble size increase monotonically during free drainage, and gradients of structural and rheological parameters along the direction of gravity increase over time. The yield stresses in milk foams were as predicted from phenomenological modeling, emphasizing the reliability of the measurement setup.

Consumer Choices and Habits Related to Coffee Consumption by Poles

Summary: Through a study of 1500 adult respondents in Poland using the computer-assisted web interviewing (CAWI) method, three main groups of coffee consumers were identified: Neutral coffee drinkers, Ad hoc coffee drinkers, and Non-specific coffee drinkers. The research indicates that Polish coffee consumers prefer traditional brewing methods but are also open to new sensory experiences.
