Detecting Freshness of Fruit and Vegetable Without and With Edible Protein-Based Foil

Tijana Kojic et al.

Summary: Food packaging is crucial in today's society, but its impact on the environment cannot be ignored. This study focuses on exploring the use of protein-based films to maintain the freshness of chopped fruits and vegetables, as a more eco-friendly alternative to plastic foils. The bioimpedance variation is found to correlate well with the ripening of fruits and vegetables, providing a non-destructive method for freshness characterization.
