Isomerization of galactose to tagatose using arginine as a green catalyst

Summary: This study investigated the conversion of galactose to tagatose using arginine as a catalyst. The results showed that increasing temperature and time led to continuous consumption of galactose and the formation of rare sugars. Arginine concentration and initial galactose concentration also affected the yield of tagatose.

Insight into formation of various rare sugars in compressed hot phosphate buffer

Summary: This study found that under high temperature and pressure conditions, various sugars can be isomerized or epimerized into rare sugars. The yields vary slightly between different sugars, with higher yields observed for rare disaccharides than rare monosaccharides, and higher yields for hexose compared to pentose. Additionally, the formation of organic acids during the process leads to a decrease in pH, and the isomerization and epimerization reactions hardly occur at pH levels lower than 6.3.

Browning and pigmentation in food through the Maillard reaction

Summary: The Maillard reaction, discovered in 1912, is a complex chemical reaction that occurs in heated solutions containing sugar and amino acids, resulting in the formation of color and aroma. The brown color is mainly attributed to melanoidins, while various low-molecular-weight pigments formed through the reaction contribute cumulatively to color recognition. This chemically clear information provides a novel perspective on browning or pigmentation through the Maillard reaction.
