Screening candidate genes related to volatile synthesis in shiitake mushrooms and construction of regulatory networks to effectively improve mushroom aroma

Summary: In this study, 30 genes related to the synthesis of characteristic volatiles in shiitake mushrooms were identified. Key pathways for volatile synthesis were determined as histidine metabolism, glutathione metabolism, and biosynthesis of unsaturated fatty acids through enrichment analyses and correlation analyses. Gene cluster and correlation analyses were conducted to understand the combined effects of different genes in enzymatic reactions.
