Influences of microwave exposure to flaxseed on the physicochemical stability of oil bodies: Implication of interface remodeling

Ovomucin may be the key protein involved in the early formation of egg-white thermal gel

Effects of electrolysed water combined with ultrasound on inactivation kinetics and metabolite profiles of Escherichia coli biofilms on food contact surface

Summary: This study investigated the metabolic responses of Escherichia coli biofilms to the combined stresses of ultrasound and low concentration acidic electrolysed water. The findings showed that ultrasound disrupted nucleotide metabolism in E. coli cells within biofilms, while low concentration acidic electrolysed water treatment led to increased amino acid contents and decreased carbohydrate contents. Adaptive strategies like glutamate decarboxylase system and mixed acid fermentation were activated to different extents under combined treatment.

Transcriptome-based insights into the calcium transport mechanism of chick chorioallantoic membrane

Quantitative transcriptomic and metabolomic analyses reveal the changes in Tricholoma matsutake fruiting bodies during cold storage

Summary: This study used transcriptomic and metabolomic analysis to investigate the metabolic changes in Tricholoma matsutake fruiting bodies during cold storage. It was found that genes related to the catabolism of proteins, carbohydrates, and lipids were upregulated, but the corresponding primary metabolites did not accumulate. The synthesis and metabolism of cell wall components, chitin and beta-1,3-glucan, were regulated, indicating dynamic remodeling. Additionally, indole-3-acetic acid and components of its synthesis pathway were discovered, suggesting a potential role as a communicator between T. matsutake and its symbiotic plants.

Integrated metabolomics of big six Escherichia coli on pea sprouts to organic acid treatments

Summary: Naturally occurring organic acids (OAs) have shown satisfactory effects in inhibiting common pathogens on fresh produce, but their effectiveness against the big six Escherichia coli serotypes has not been addressed. In this study, the sanitizing efficacy and antimicrobial mechanisms of ascorbic acid (AA), citric acid (CA), and malic acid (MA) treatments on pea sprouts were investigated using nuclear magnetic resonance (NMR) spectroscopy and ultra-high performance liquid chromatography-mass spectrometry (UPLC-MS). The results showed that although the antimicrobial efficacy varied, the three OAs induced consistent metabolic changes in the E. coli strains, particularly in the metabolism of membrane lipids, nucleotide derivatives, and amino acids. The study highlights the effectiveness of a dual-platform metabolomics investigation in elucidating the metabolic responses of big six E. coli to OAs and provides a scientific basis for applying OA treatments to future fresh produce sanitization.

Comparison of muscle lipidomes between cattle-yak, yak, and cattle using UPLC-MS/MS

Summary: Quantitative comparison of longissimus thoracis lipidomes among cattle-yak, yak, and cattle revealed differentially abundant lipids (DALs) related to post-mortem physiology and meat quality. The muscle lipid profiles of plateau cattle (cattle-yak and yak) were significantly different from plain cattle (cattle), with higher abundance of phospholipids containing long-chain polyunsaturated fatty acids and accumulation of long-chain acylcarnitines. These results suggest differences in energy metabolism and lipid nutrition quality between plateau cattle and plain cattle muscles.
