Effect of in vitro simulated gastrointestinal digestion on the antioxidant activity, molecular weight, and microstructure of polysaccharides from Chinese yam

Summary: This study investigated the antioxidant properties and changes in molecular weight, antioxidant activity, and microstructure of Chinese yam polysaccharides (CYP-A) during in vitro digestion. Furthermore, the molecular weight of CYP-A decreased after intestinal digestion and its structure changed.
