Thermal conditions and active substance stability affect the isomerization and degradation of lycopene

Thermal stabilities of lycopene and ß-carotene in tomato pulp and pink grapefruit juice

Summary: The thermal stabilities of lycopene and β-carotene in tomato pulp and pink grapefruit juice were examined at different temperatures. Degradation of both pigments followed first-order reaction kinetics, but β-carotene degradation showed a biphasic curve. Temperature had a significant impact on the stability of both pigments, with shorter half-life values at higher temperatures. The degradation of lycopene and β-carotene was less sensitive to temperature in tomato pulp, but highly sensitive in pink grapefruit juice. Correlations were found between pigment concentrations and color values.

Heat and Light Stability of Pumpkin-Based Carotenoids in a Photosensitive Food: A Carotenoid-Coloured Beverage
