Dextran sulfate facilitates egg white protein to form transparent hydrogel at neutral pH: Structural, functional, and degradation properties

Summary: The study found that the addition of highly charged dextran sulfate (DS) can enhance the hardness and water holding capacity of egg white protein (EWP) gels formed under pH 7.0 conditions. The addition of DS significantly reduced the surface hydrophobicity of EWP and promoted the exposure of free sulfhydryl groups on the protein molecular surface. Moreover, the addition of DS delayed the in vitro digestion of EWP.
