ZnO Nanostructures in Active Antibacterial Food Packaging: Preparation Methods, Antimicrobial Mechanisms, Safety Issues, Future Prospects, and Challenges

Summary: Packaging of food products is a crucial stage in the food supply chain, and the use of nano-size materials, such as ZnO nanoparticles, can improve packaging performance and extend food shelf-life. This review discusses the application of ZnO nano-size in active packaging of foods, including the crystal structures, morphologies, antimicrobial mechanisms, and packaging applications. The generation of reactive oxygen species is the primary antimicrobial mechanism of ZnO NPs, which can inhibit the growth of fungi and bacteria and reduce cross-contamination risks. The potential health concerns and hazards of ZnO NPs application, such as migration and ingestion, are also elaborated, emphasizing the need for further safety regulations and case studies.

Preparation and characterization of polylactic acid/fenugreek essential oil/ curcumin composite films for food packaging applications

Summary: Curcumin and Fenugreek essential oil were blended into PLA matrix to improve the functional properties of the composite film. The addition of these fillers improved UV-blocking, tensile strength, flexibility, and other properties while slightly decreasing water vapor permeability. The PLA-based composite film also exhibited good antibacterial and anti-oxidant properties, as well as comparable food quality to commercial polyethylene film in a strawberry test.

Encapsulation of thyme essential oil using electrospun zein fiber for strawberry preservation

Summary: This study assessed the effect of encapsulating thyme essential oil (TEO) into zein electrospun fiber film on extending the shelf life and preserving the quality of strawberries during storage. The findings showed that the zein/TEO fibers significantly decreased weight loss and maintained the anthocyanin content, firmness, and color of the strawberries. After 15 days of storage, the strawberries treated with zein/TEO fibers had higher scores for firmness, appearance, and sensory evaluation compared to the control.

Amazon-sustainable-flour from acai seeds added to starch films to develop biopolymers for active food packaging

Summary: The study shows that active and sustainable polymers for food packaging can be obtained from acai seeds and broken rice grains, turning them into valuable raw materials in the market. The incorporation of 5% acai seed flour in the films was found to be the most suitable, demonstrating antioxidant potential and better distribution in the film matrix. The packaging-related properties of the polymers were mainly influenced by the high-fiber content and polyphenolic compounds present in the acai seed flour.

Chitosan for food packaging: Recent advances in active and intelligent films

Summary: The massive use of petroleum-based plastics in food packaging has led to serious environmental issues, prompting the need to develop biodegradable polymer packaging. Chitosan, a natural polysaccharide with non-toxic, antimicrobial, and antifungal properties, is considered a promising material for food packaging. Recent studies have evaluated the potential of active and/or intelligent chitosan-based films in improving food preservation and monitoring. The addition of active compounds has been shown to enhance the mechanical, barrier and functional properties of chitosan films, with potential applications in antimicrobial and antioxidant activities.

The antimicrobial properties of the films should be further investigated for perishable food products stored above 0 degrees C.

Development and characterization of fish gelatin-based biodegradable film enriched with Lepidium sativum extract as active packaging for cheese preservation

Summary: The study examined the physical and functional properties of gelatin-based films enriched with organic extracts from Lepidium sativum seeds, finding that films enriched with LSE3 showed high antioxidant potential and stability in preserving cheese during chilled storage. Wrapping cheese with gelatin-based film enriched with LSE3 reduced syneresis, stabilized color, peroxidation, bacteria growth, and minimized changes in texture parameters. Overall, the enriched gelatin film proves to be an effective active packaging material for maintaining cheese quality.
