Summary: Acrylamide is a well-known toxic compound formed during the thermal processing of food products through the Maillard reaction or acrolein route, and it is a probable human carcinogen. There are two main approaches for reducing acrylamide concentration - either by preventing its formation or by removing it after generation, which can be achieved through conventional and emerging techniques, with a combination of methods being more efficient. Different techniques and their combinations for reducing acrylamide in various food products were discussed, along with the potential sensory changes in food products resulting from acrylamide reduction strategies.
