Heating affects protein digestion of skimmed goat milk under simulated infant conditions

Dynamic in vitro gastric digestion behavior of goat milk: Effects of homogenization and heat treatments

Summary: Dynamic in vitro gastric digestion model, the human gastric simulator, was used to investigate the gastric digestion behavior of differently processed goat milks. The results showed that homogenization and heat treatment led to highly fragmented gastric clots, delayed pH reduction, altered chemical composition, promoted calcium release, and accelerated protein hydrolysis and emptying. The effects of processing on goat milk digestion were similar to cow milk, with homogenization having a greater impact.
