Utilising waste from soybean processing as raw materials for the production of preparations with antioxidant properties, serving as natural food preservatives-A pilot study

Summary: This study developed technologies for producing protein hydrolysates from soybean bran using different enzyme preparations and evaluated the influence of these preparations on the antioxidant activity and quality of the hydrolysates. The results showed that all hydrolysates had high antioxidant properties, but the ability to scavenge free radicals varied depending on the method of preparation. Hydrolysates obtained from digestion with Alcalase had the highest protein and polyphenol content, as well as high antioxidant properties.
