Characterization and molecular docking study of taste peptides from chicken soup by sensory analysis combined with nano-LC-Q-TOF-MS/MS

Summary: Dynamic quantitative descriptive analysis and temporal dominance of sensations were used to analyze the taste profiles of chicken soup. Nine taste peptides were identified and evaluated, with umami and saltiness being the dominant tastes. Molecular docking results indicated the key binding sites for taste receptors and their correlation with umami intensity.

Analysis of umami taste substances of morel mushroom (Morchella sextelata) hydrolysates derived from different enzymatic systems

Summary: Seven enzyme groups were used to hydrolyze broken fruiting bodies of morel mushroom to extract umami substances. The hydrolysate obtained from Neutrase-Flavourzyme (NF) combination showed the best flavor properties, with the highest content of small peptides, free amino acids, and flavor 5'-nucleotides. The reaction conditions of NF were optimized by response surface methodology (RSM) to achieve the highest degree of hydrolysis.

Summary: In this study, a polysaccharide named LVF-I was successfully isolated from Lactarius volemus, containing various monosaccharides and showing inhibitory effects on the proliferation of lung and breast cancer cells, as well as enhancing splenocyte proliferative response and macrophage phagocytic ability. LVF-I also induced the secretion of nitric oxide, interleukin-6, and tumor necrosis factor-alpha by macrophages.

Molecular docking experiments revealed that Asp192 and Glu301 in T1R3 may play a crucial role in the release of umami peptides, with hydrogen bond and electrostatic interactions being the key forces between the ligand and receptor.
